HOW DO WE CREATE OUR EXTRA VIRGIN OLIVE OIL?

To achieve a unique, exceptional and sublime EVOO we use exclusively mechanical extraction methods, first cold pressed, which allows to extract and preserve only the most exquisite and subtle aromas of our oil. In this way, the EVOO Cortijo Santa María maintains the essence of the land of Andalusia (southern Spain) to make it an exclusive food product for the most demanding palates.
Made with the formula of our master olive grower past from generation to generation, Juan García Jiménez, we created a picual olive juice in which the olives go straight from the tree to the mill, avoiding unnecessary storage that could harm the quality of the oil.

WHY EVOO CORTIJO SANTA MARIA?

In Spain there are numerous oil mills that produce a high quality EVOO. However, a high percentage never reaches the final consumer.
This happens when in wholesale, sometimes EVOO is mixed with other low quality oils. In this way, the costs are reduced and oils with little aroma and low quality are sold at very economical prices.
That is why, Cortijo Santa María wants to deliver its pure EVOO to the final customer, conscious about the care of his/her health and willing to value the artisan work and the purity of the product.

EXTRA VIRGIN OLIVE OIL AND HEALTH

Numerous scientific studies have shown that Oleocanthal, a specific polyphenol, only present, and in minimal amounts, in EVOO has the incredible property of literally killing cancer cells.
Thus, when the grinding process is clean, fast and at a low temperature, the oil preserves the precious polyphenols and antioxidants. These microcomponents give the aroma and flavor to EVOO, while protecting us against Cancer or Alzheimer’s.
In addition, monounsaturated fatty acids reduce bad cholesterol (LDL) and increase good cholesterol (HDL). These types of fats are also highly recommended for people with type II diabetes, since they regulate their blood sugar levels.
